Cheesy Pepper Quesadillas

  • Melt butter in large skillet on medium-high heat. Add peppers, onions and cumin; cook and stir 4 min. or until vegetables are crisp-tender. Drain, reserving liquid.
  • Preheat oven to 375°F. Spoon about 1/4 cup of the vegetable mixture onto each tortilla; sprinkle each with 2 Tbsp. cheese. Fold tortillas in half; place on baking sheet. Brush with the reserved liquid.
  • Bake 8 min. or until cheese is melted. Cut each quesadilla in half. Serve warm with the salsa.

These quesadillas also make great appetizers. Assemble and bake as directed. Cut each into four wedges. Makes 20 servings, one wedge each.

Make Ahead

Prepare as directed, but do not bake. Cover; refrigerate. When ready to serve, bake, uncovered, at 375°F for 15 to 18 min. or until cheese is melted and filling is hot.
