  • Mix meat, 1/4 cup of the onions, one-third of the garlic, 1/2 tsp. of the oregano and the cilantro in large bowl. Add cracker crumbs and egg; mix well. Shape into 1-inch balls; set aside.
  • Cook and stir remaining 3/4 cup onions and remaining garlic in hot oil in Dutch oven or large saucepan on medium-high heat 3 to 5 min. or until onions are crisp-tender. Add broth, tomatoes, spinach and remaining 1-1/2 tsp. oregano; mix well. Bring to boil. Add meatballs; stir until evenly coated. Reduce heat to low; cover. Simmer 20 to 25 min. or until meatballs are cooked through, stirring occasionally.
  • Serve with additional saltine crackers.
