  • Mix meat, 1/4 cup of the onions, one-third of the garlic, 1/2 tsp. of the oregano and the cilantro in large bowl. Add cracker crumbs and egg; mix well. Shape into 1-inch balls; set aside.
  • Cook and stir remaining 3/4 cup onions and remaining garlic in hot oil in Dutch oven or large saucepan on medium-high heat 3 to 5 min. or until onions are crisp-tender. Add broth, tomatoes, spinach and remaining 1-1/2 tsp. oregano; mix well. Bring to boil. Add meatballs; stir until evenly coated. Reduce heat to low; cover. Simmer 20 to 25 min. or until meatballs are cooked through, stirring occasionally.
  • Serve with additional saltine crackers.

Special Equipment Needed

Substitute ground turkey breast for the ground beef.

Special Extra

Stewed tomatoes come in several different varieties - try one with garlic and jalapenos for extra flavor.

Make it Easy

If you don't like to chop onions, try purchasing them already chopped from the salad bar of your local supermarket. They can also be found already chopped in the frozen vegetable section. Just measure out what you need and start cooking - no need to thaw.
