  • Bake potatoes at 400°F for 1-1/4 hours or until tender. Cut each potato in half lengthwise. Scoop out centers, leaving 1/4-inch-thick shells. Reserve 5 of the shells; discard remaining potato shell. Mash scooped out potato; set aside.
  • Cook onion in margarine in small skillet until tender; stir in mustard. Set aside.
  • Beat mashed potato, onion mixture, 1/2 cup of the cheese and pepper in medium bowl with electric mixer on medium speed until well blended. Pipe or spoon mixture into potato shells; sprinkle with remaining 1/2 cup cheese.
  • Bake at 400°F for 20 minutes or until tops are golden brown and potatoes are heated through.
